# Needed Ingredients:

→ Dairy & Cheese

01 - 4 oz feta cheese, crumbled
02 - 4 slices cheddar or mozzarella cheese
03 - 2 tbsp unsalted butter, room temperature

→ Bread

06 - 1 tbsp olive oil
07 - Freshly ground black pepper, to taste
08 - Pinch of red pepper flakes (optional)

# Directions:

01 - Heat a nonstick skillet over medium heat and add olive oil.
02 - Sprinkle half the crumbled feta into two circles roughly the size of the bread slices directly onto the skillet.
03 - Crack one egg into the center of each feta circle. Season with black pepper and optional red pepper flakes. Cook 2–3 minutes until feta forms a golden crust and egg whites are set. Flip carefully and cook 1 minute more for soft yolk or longer for desired firmness. Remove and set aside.
04 - Butter one side of each bread slice. Place two slices, buttered side down, on a clean surface and layer each with two slices of cheese. Top each with a feta-fried egg, then cover with remaining bread, buttered side up.
05 - Wipe out the skillet, return to medium heat, and grill sandwiches 2–3 minutes per side, pressing gently, until golden brown and cheese is melted.
06 - Slice sandwiches and serve immediately.

# Expert Hints:

01 -
  • The crispy feta edges create this incredible salty crunch that you cannot get from regular cheese alone
  • Its the perfect marriage of diner breakfast and lunchbox comfort food
  • Ready in about twenty minutes but tastes like something from a fancy café
02 -
  • Do not rush the feta frying step those crispy edges are what make this sandwich special
  • Use a good nonstick pan or the feta will stick and you will lose your crispy circles
  • Let the sandwiches rest for about thirty seconds after grilling so the cheese sets slightly
03 -
  • Keep the heat at medium or the feta will burn before the egg whites set properly
  • Use a fish spatula to flip the eggs it is thin and flexible enough to slide under without breaking the yolks
  • If assembling multiple sandwiches keep the first ones warm in a two hundred degree oven
