12 - 1 teaspoon Dijon mustard
13 - 1 garlic clove, minced

# Directions:
01 - In a medium saucepan, bring 3 cups water and 1/2 teaspoon salt to a boil. Add rinsed pearl barley, reduce heat to low, cover, and simmer for 25-30 minutes until tender. Drain excess water and allow to cool to room temperature.
02 - In a large bowl, combine cooled barley with finely chopped parsley, mint, and dill. Add diced red onion, halved cherry tomatoes, and diced cucumber. Toss gently to distribute evenly.
03 - In a small bowl, whisk together extra-virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, 1/2 teaspoon salt, and freshly ground black pepper until emulsified.
04 - Pour the prepared dressing over the barley mixture and toss gently to coat all ingredients evenly.
05 - Taste and adjust seasoning as needed. Serve chilled or at room temperature.
